On Saturday mornings, it is my job to make the 'bread' part of breakfast. Typically, this means pancakes, but it can also mean other things like scones, coffee cake, or as the above title states, apple oven pancake. This recipe is for when I am feeling especially lazy, because all I have to do is throw it together quick and pop it in the oven. I have made it without brown sugar and it is just as good.
Ingredients:
2 Tbsp butter
2 large eggs
1/2 cup all purpose flour
1/2 cup milk
1/4 tsp salt
2 Tbsp packed brown sugar
1/4 tsp cinnamon
1 apple peeled and thinly sliced
Directions:
1) Heat oven to 400 deg F. In 9 inch pie plate, melt butter and brush butter over bottom and side of pie plate.
2) Sprinkle brown sugar and cinnamon evenly over melted butter. Arrange 1 cup thinly sliced and peeled baking apple over sugar.
3) In a medium bowl, beat eggs slightly with wire whisk . Beat in flour, milk, and salt just until mixed. Do not overbeat or pancake may not puff. Pour into pie plate.
4) Bake 20 - 25 minutes or until puffy and deep golden brown. Serve immediately.
